If it is DoS the log will show a large number of request in a short period of time and Apache will fork new process to handle the surge of traffic.This way, a DoS can be positively confirmed. Once it is confirmed, you can configure your Apache to limit the total number of process to be within the limit of hosting service. This way, the DoS will cause the service to be slow, but it won't crash the system.

If the DoS are low level, e.g. Ping, etc. The Apache log will not show anything special. This kind of stuff can only be deal with by the hosting vendor to install firewall.

If the Log indicates the attacker gets in through the holes of Apache, then it is time to upgrade the Apache.
